Jeanne Boyer, a first time canner, stirs the "So Easy to Preserve Tomato Salsa" that her class prepared at Olivia Haydel Senior Center as part of UGA's Preserving Your Harvest -- Home Canning Basics taught by Cindee Sweda, with the Rockdale County Cooperative Extension office on Parker Road. Each participant in the class took home a jar of tomato salsa and a jar of blueberry spice jam. Sweda said that student evaluations after the class showed that all the students really liked the hands-on process and the experience of using the canning equipment. There will be another class offered called Preserving Your Harvest: Low Acid Canning on Thursday, July 12, 6 p.m. to 8:30 p.m. Preregistration and payment of a $15 fee are required.
