I'm a Southern girl and what Southern gal doesn't love a good piece of fried chicken or some hot homemade biscuits? But, I'm also Southern enough to admit you really can't beat a fresh-out-of-the-garden salad.
This week's featured recipe could literally be made from vegetables in your garden -- well, everything but the salad dressing. This particular salad does not require any lettuce and it is what I like to call a nice summer salad.
I know a lot of cucumber-based salads tend to call for a more cider vinegar base, but I'm not a fan of that type of flavoring for this kind of salad. The zesty Italian dressing is the perfect way to top off this salad.
So leave the lettuce in the refrigerator and try this refreshing cucumber salad.
Three cucumbers, cut into bite-size pieces
1 pint of red grape tomatoes
One small red onion, finely chopped
Three sprigs of fresh dill (optional)
1 to 1 -1/2 cups of zesty Italian salad dressing
In a bowl (preferably one with a lid), combine the cucumbers, tomatoes and onion.
Pour the salad dressing over the vegetables.
Place the lid on the bowl and shake the mixture until the ingredients are well coated with the dressing.
Refrigerate for at least three to four hours, and even longer is better. Stir the ingredients thoroughly before serving.
Tip: Please note that you can peel the cucumber and cut the tomatoes into halves.
